If I need a sett of 12 epi, will the finished product be any different if I warp 1 end each in a 12 dent reed, or 2 ends each in a 6 dent reed?

With finer reeds, it can make a difference.  I once put just one thread in a fine reed and I could not move it easily enough to weave, so I had to re-sley in a coarser reed.  So, try the yarn in the 12 dent reed to see if it moves easily.
