I saw some towels that where similar at a member of our weaving groups' house and have been wanting to try to figure out how they where done. I figured that the only way would be as a derivative of Overshot, then it dawned on me about Monk's Belt. I found the simplest pattern I could in Margeurite P.Davison's book "A Handweaver's Pattern Book", pg 102.  I took the simplest Monk's Belt and changed it to alternating single shots instead of 3 repeats at a time, using tabby.
