I could buy sodium acetate locally at Chemical Services in Dayton, a supplier of industrial chemicals but I don't because they usually sell in 25 lbs or more bags.  I get mine from Pro Chem because 1-2lbs lasts a long time. 

Let's say you want to dye today  -- I can think of two alternatives:

Potassium acetate can be substituted for sodium acetate.  It is sometimes used  to melt ice.  This requires a lot of label reading-- you don't want anything else just potassium acetate.

You can make your own from vinegar and soda ash ( sodium carbonate).  Seems to be a chemical of interest among the DIY, they call it hot ice.  Here is a video, http://www.youtube.com/watch?v=jpEZWdPIg9o.
