I have taken the wrap off the loom, only to find that it is way to large. I lost count of how much I had woven some time during the process, and this is 250 cm. long. I need to decide how much to cut off, but I am a bit apprehensive of redoing the hemstitching off the loom.

cutting the fabric

You did a lovely job on this!  Don't worry about the hemstiching. If you're going to hem it, pick a line that gives you a hem allowance. zig zag either side of the line with your sewing machine. cut it and hem it.  a bit of bondable webbing could also be used if you need more stability. If you wanted fringe, you can still have it if you cut off at the end of the fringe allowance and ravel for the length. before you get to the intended woven end, add hemstitiching on the proper rows, then finish ravelling. Wet and press the fringe to straighten.
